Advanced Starter Cultures 
for Meat Production

Ambello supplies the Lyocarni™ range of Italian starter cultures from Sacco, freeze-dried lactic acid cultures specifically developed for meat applications.

These cultures are formulated for a wide range of products, including salami, fermented sausages, fresh and cooked smallgoods, pancetta, coppa, and other aged meats. Composed of carefully selected lactic acid bacteria, they enable controlled fermentation by lowering pH, supporting colour development, and enhancing flavour and aroma profiles.

By standardising the fermentation process, Lyocarni™ cultures help improve batch consistency while inhibiting the growth of harmful microorganisms, including Listeria monocytogenes. This supports improved product stability, safety, and shelf-life.

Available in formats suitable for 100, 200, 500, and 1000 kg batches, with custom dosing options available, these cultures provide flexibility across both artisan and industrial production environments.

Ambello also supplies Natacid, an anhydrous formulation containing natamycin, designed to inhibit the growth of yeasts and moulds and support the preservation of meat products during maturation and storage.

Whole Muscle & Surface Cultures

Whole muscle and mould cultures are used in the production of traditional dry-cured meats, where fermentation and maturation occur over extended periods.

Applied to the surface of intact meat cuts, these cultures introduce beneficial microorganisms that support controlled maturation, enhance flavour development, and protect against spoilage organisms.

Common applications include prosciutto, coppa, and other whole-muscle cured products, where they contribute to distinctive taste, texture, and visual characteristics.

Natural Aroma Systems

Ambello’s natural aroma systems are engineered to enhance and standardise flavour profiles across cured and processed meat applications. Developed using advanced extraction techniques, these systems are designed to complement, not mask, the natural characteristics of the product.

Aroma systems act as a precision layer, refining and enhancing flavour profiles without altering the core formulation. By amplifying existing flavour notes and improving overall balance, aroma systems enable producers to achieve greater consistency, depth, and sensory quality across every batch.

High-Performance Cultures for Faster Production

Fast starter cultures, also known as rapid acidification cultures, are designed to accelerate fermentation by quickly lowering the pH of the meat.

This rapid acidification improves safety by limiting the growth of unwanted bacteria while supporting the development of flavour, texture, and colour. These cultures are ideal for products requiring shorter production cycles, such as pepperoni, chorizo, and Danish-style salami.

Functional Spice Blends

Ambello’s functional spice blends are developed to deliver consistent flavour, aroma, and processing performance across a wide range of meat applications. Combining traditional European flavour profiles with functional ingredients, these blends support both product quality and production efficiency.

These blends form the foundation of flavour, providing structure and consistency across the product base.
